Instructions
-
Preheat oven to 350 degrees
-
Spray a 9x9 or 11x7 baking dish with non-stick cooking spray.
-
Line the bottom of the baking dish with parchment paper. This will make getting it out of the pan easier.
-
In a medium bowl, mix the flour, cocoa powder and salt together.
-
Next, place the butter in a medium size microwave safe bowl. Heat butter in microwave for 15 seconds or until just melted.
-
Whisk in the sugar.
-
Add the oil to the sugar/butter mixture.
-
Add the eggs and vanilla and whisk until smooth.
-
Next, add the dry mixture to the wet ingredients and mix well.
-
-
Add the chocolate chips in and mix.
-
Pour batter into prepared pan.
-
Bake at 350 degrees for 28 - 30 minutes or until a toothpick comes out almost clean.
-
Remove from the oven and cool for 5 minutes. Then turn out onto a wire rack to completely cool.
-
While the brownies are cooling, make the frosting.
-
With a handheld mixer or stand mixer, mix the cream cheese and butter until creamy.
-
Slowly add powdered sugar
-
Add vanilla and heavy cream and whip until smooth.
-
When brownies have cooled, cut into small rectangles.
-
Put frosting into a frosting bag or sandwich bag. Cut off the tip.
-
Use frosting to create "bandages" across the brownie
-
-
Add candied eyes to finish the mummy
-
Happy Halloween!!
