Homemade Chicken Enchiladas
Description
Homemade chicken enchiladas are the ultimate comfort food. Juicy shredded chicken is wrapped in tender tortillas, smothered in enchilada sauce, and topped with layers of cheesy goodness. This flavor-packed dish is a true family favorite dinner! Whether you like them spicy or mild, these enchiladas are easy to make any night of the week!

In a small saute pan, saute onion and red bell pepper in 2 Tbs. of canola or vegetable oil.

Add 1 small can (4oz.) of green diced chilies and mix well. Add mixture to cooked and shredded chicken breast and mix well.

Next, heat 1-2 Tbsp. of canola or vegetable oil in a small saute pan. Heat corn tortillas in heated pan, one by one, until soft (about 30 sec. each side). Remove from pan and place on a paper towel lined plate.

Next, pour 1/4 of green enchilada sauce in the bottom of a 9 x 13 baking dish, covering the bottom.

Add 1/4 of the green enchilada sauce to the chicken mixture and mix until well combined.

Place 2-3 Tbsp. of chicken mixture in a tortilla, adding 1-2 tsp. of shredded cheese. Then, roll the tortilla's and place in the pan, seam side down.

Cover enchiladas with the remaining green enchilada sauce. Top with cheese, cilantro and black olives.

Cover with foil and bake at 375° for 40 minutes. Remove foil and add additional cheese (optional). Cook for another 10 minutes.

Remove from oven and let cool 5-10 minutes before serving. Top with your favorite toppings: sour cream, guacamole, avocado or salsa. Enjoy!
