But, it’s important to know when to use room temperature butter and when to use cold butter.
Cookies
Be sure the butter is room temperature (not softened/melted) in the microwave. The ingredients mix together well and create a soft cookie with good volume (rise). If you microwave or melt the butter, the cookies will spread and you will have a flat cookie. * I recently started following a gal that uses frozen butter in her cookies. I will try it and let you know what I think.
Scones & Pie Crusts
You want the butter really cold or frozen. This creates a light, flaky and moist scone or crust.
Cinnamon Rolls & Cakes
You want the butter melted, but not hot. The ingredients will mix together well and create a moist batter or dough.
